I was wondering if anyone had ever heard of or seen any sort of apparatus that would allow a person missing a hand to attach a guitar pick to that arm.

you wouldnt need to have any attachment. You would just tap instead. I dont know for the guitar, but for bass there a bassist called bill clements who only has one hand.

He ties a bandanna around the top of the neck to solve some sound problems
