Whatever recipe you use, you have to burn the stovies and eat wi crumbled oatcakes.
You don't burn stovies!! LOL

Oh and a nice beetroot always goes down a treat with them too!!
I don't mean burn the whole lot but the bit at the bottom of the pan. I'm sure QM would know what I mean.
Well, I make 6 x 3 Gallon pans of stovies a week and I'm sure our customers would have summat to say if I burnt it...

Ah, but just where are these customers, Snapdarlich? Clearly not in the far nort-east of Scotland, I'd say, where some burning of the bottom of the dish is considered de rigeur.

And here's a quote from With a Fine Feeling for Food - a book of Scottish recipes by Janet Murray from which I take all my Scottish recipes... "Do not worry if they brown a little in the bottom of the pan as birstled stovies are delicious." ('Birstle' is a Scots word for 'scorch' or 'toast'.)

So, I do hope you'll start cooking them properly from now on! (Joke!)
