Sweet potato

I have just bought a large sweet potato (the same size as a normal baking potato) - can I just cook it like a normal jacket potato??
My dad says you can't eat the skin but as he's quite often wrong about cooking related stuff - thought I'd check with you guys before I get on with cooking it and killing myself by eating the skin!

Well I can assure you I am still alive and well after eating many sweet potatoes including skin, which yes you can eat, I only find that both ends of the sweet potato tend to be a little bit bitter, to cook them - mash them, bake them, roast them..delish..!!! Chop them into large chunks and sprinkle with olive oil and roast.......bootiful !
As far as im aware you can eat it,
ive never heard of it being cooked like a jacket potato though as they tend to be alot softer when cooked when we have them!
when we roast them they come out very soft, where as the normal potatos we roast the same way in the dish with them are like roasties!
Here in the Southern part of the USA - we bake them in the skins - just like a normal potato - all the time - just prick the skin a little.

We serve them slit open lengthwise on the top and most people like to put butter on them to eat them - some like butter, brown sugar & cinnamon.
you can peel them and cut them into half inch thick slices and fry them in oil. sprinkle them with curry powder and brown sugar towards the end of cooking - really delicious!
we also have them roasted in olive oil with parsnips, carrots, onions, swede and butternut squash, with a little garlic sprinkled over the top.
or boil and mash 'em with creme fraisch and garlic.
or cut them into chunky chips, roast them and have them instead of oven chips.
the only way we've not had them is in their jacket!!

i do them in the microwave but dont eat the skin! Put a knob of butter and some salt and pepper on!

I find the skin quite tough
i bake them too, and eat the skin like a white potato. i like the contrast of sweet potato topped with blue cheese. they dont take as long to bake as a white potato (size for size).
I bake them too!! They are so much nicer than normal potatoes. They don't take as lomg to bake though and they are much softer. They are also nice grilled.
my sister in law (who is american) does them in the oven with marshmallows!!!! typical american dish aparently. But they are delicious baked and fantastic roasted with other veg too
Sweet Potato Casserole

(Great when you have leftover baked sweet potatoes.)

3 cups mashed sweet potatoes
1/2 cup white sugar
2 eggs, beaten
1/4 cup melted butter
1/2 cup milk
1 teaspoon vanilla extract
1 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter
1 cup shredded coconut
Miniature Marshmellows - Enough to cover top of casserole.

Preheat oven to 350 degrees F (175 degrees C). Spray one 2 1/2 quart casserole dish with non-stick cooking spray.
In a large bowl, combine the sweet potatoes, sugar, eggs, 1/4 cup butter, milk and vanilla. Pour into prepared casserole dish.
Mix together the brown sugar, flour, margarine and coconut; sprinkle over casserole. Cover the top with miniature marshmallows.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes - making sure the marshmallows don�t burn.

765 g mashed sweet potatoes
100 g white sugar
2 eggs, beaten
55 g melted butter
120 ml milk
5 ml vanilla extract
220 g packed brown sugar
40 g all-purpose flour
45 g butter
75 g shredded coconut
Yes, I can agree, that the skin is edible...
I've had them with marshmallows, too at my sister-in-law's!

Yucky, I had to scrape the top off to eat the potatoes that I love!
