Is their any information (ever recorded in history either oral or written) about Midieval Europe as to why other people ( not including columbis) didn't try to find America after the Vikings "spread around" rumors about North America?

They probably did, but such adventures were not as widely publicised.
I'm not sure where I saw it, but I have read that the existence of North America was well understood, and it was often visited. Columbus knew of this, but believed America only extended so far South, like Greenland. He thought he could sail South of America straight to India. That's why, when he hit land in South America, he thought he was there and called the natives Indians.
