I make soup in mine - here's red lentil and carrot soup

1 teaspoon vegetable oil
1 small onion, chopped finely
2 carrot, diced
1 bay leaf
500 ml hot vegetable stock made with a stock cubs
100g red lentils, washed

1 Heat the oil and fry the onion, carrots and bay leaf for a few minutes

2 Sitr in the hot vegetable stock with the lentils. Return to the boil, cover and simmer for 10-15 minutes until the lentils are soft and mushy.
3 Stir well. Blend in blender, add more hot water of necessary.

Can add chopped fresh coriander and/or top with cremem fraiche if liked.
Smoothies. Banana and pear (cut up into quite small pieces) with a bit of cranberry or orange juice. Not quite as smooth as when you use a proper juicer, but at least you are getting the fibre as well.
I do Jamie Olivers autumn minestrone soup from his Italy book. It would take an age to chop all the veg otherwisebut takes seconds in the blender.
The kids love it, it's filling and we have parmesan cheese on top, a good way to get them to eat vegetables.
Happy to post the recipe if you want it but it's quite lengthy (and I wasn't sure if you were allowed to copy someones published recipes onto here ??)

I agree about smoothies too, they take seconds to make. I use apple juice, natural yoghurt, a banana and whatever fruit is available. Frozen mixed berries are a good standby, and also throw in a few frozen blueberries as they're very good for you.
