My friend once cooked me a meal, and it was SO simple. He heated some cream, added some peppers, and served it with pasta. But the thing is, I have no idea what cream he used, because I never use cream for cooking. I don't even know if cream can be heated!?! Can you help me?

Single cream is good to cook just try not to overheat it. My ex used to make a smashing pasta sauce with danish blue cheese and single cream. Yummy.
boisson cheese is also a quick and easy way to make a sauce, just gently melting it then mixing with pasta.
Creme fraiche is also good with pancetta, or any bacon bits, leeks and garlic as a pasta sauce. I tend to get distracted when cooking and the cream has boiled many times - but tastes just the same!

I've never used cheese as a sauce - I'll try it now, though.

I have often used cream in sauses, single, double, and whipping. The important this is to take the pan off the heat before adding the cream as comloulou writes. Ever had curry? It may have been made with cream!

cool guys! I think I will try single cream. And Hamish, now I think of it, korma does taste pretty creamy!
Soured cream is superb with fried mushrooms.
soured cream is gods own dressing !! especially with mexican dishes .
you guys are so great! its to hot today to have anything to heavy with pasta so i might try one of the recipes sugested they sound fantastic any web adresses any one can suggest for decent pasta recipes?
Personally, I would use double cream. Double cream is much easier to cook with due to its higher fat content. You have to be much more careful with single or soured cream to stop it separating.
