Am stuck on "Of which composer was it said that he spent his life rewriting the same symphony, giving it a different number each time?

It's either Haydn or Vivaldi. Stravinsky said something like Vivaldi wrote the same piece 100 times - Haydn wrote 104 symphonies many of which appear similar at first hearing.
The trouble is lots of composers rewrote their symphonies.
Identical question on another site gives the answers Brahms , Bruckner and Shostakovitch.

Vivaldi tho' didn't write symphonies so this can't be right.

Shostakovich's symphonies are all very different - as are Brahms' and Bruckner's. It all depends on whether you like them or not!
