You can obtain information regarding your rights under EU law from all major arport information points, many major airlines and online. Do not expect airlines to follow the law however, I was "bumped" off KLM once (and no longer use them) when the gate was open and the passengers were still sitting there waiting to board. When I began to pursue this they simply lied and said I was too late - missed the flight. You and I may end up filing a small claim in court. I urge you to press any legitimate claim you have and report it to the AUC (google for it) if the airline starts to mess you about - not that they can do a lot for you when push comes to shove.
a lot of airlines will give u the compensation their and then either in cash form or with what is called an MPD which can be exchanged for a new flight or if they have a deal with a local travelex then u can cash it their.

the amount will vary depending on destination and time..
If you are offered compensation, remember the amount is set by law in the case of applicable flights/situations, and you are entitled to cash or cheque so you do not need to accept vouchers.
