I tried to use some of my of apples as fritters yesterday. I remember my mother making them and I think she used just flour and water for the batter. I had 2 problems. Making the batter stick to the apple slices and not run off as you put them into the fat. Getting the texture right, crispy batter and soft apple. One mistake I didn't make this time was using the chip basket and finding the fritter embedded in the wires. If you don't get things right the filling bubbles out (this is even worse with cheese fritters). Has anyone made them sucessfully? How runny do you make the batter? Do you fry in a frying pan or saucepan? As the folk song says; 'Capfuls, hatfuls, little heaps under the bed' (and the mice get them if we put them in the garage, so we can't get into the porch between October and December)

Make your batter a little bit thicker and flour your slices before dipping in the batter.I used selfraising flour the last time I made batter and it crisped up better.
Apple Fritters

250 g all-purpose flour
50 g white sugar
10 g baking powder
2 g ground nutmeg
6 g salt
2 eggs
235 ml milk
1890 ml oil for deep frying
848 g apples, peeled and cored
60 g confectioners' sugar for dusting

In a medium bowl, mix together flour, sugar, baking powder, nutmeg and salt. In a separate bowl, beat together eggs and milk. Stir milk mixture into flour mixture until smooth. Heat oil to 375 degrees F (190 degrees C) in a deep fryer or heavy bottomed deep pot or skillet. Slice apples into 1/2 inch rings. Dip apple slices in batter and fry, a few at a time, turning once, until golden. Drain on paper towels and dust with confectioners' sugar.

Apple Fritters

145 g cake flour
3 g baking powder
2 g salt
1 egg
80 ml milk
95 g chopped, peeled tart apple
20 g butter or margarine, melted
10 g sugar
15 ml orange juice
4 g grated orange peel
1 ml vanilla extract
oil for frying
confectioners' sugar

In a bowl, combine the flour, baking powder and salt. In another bowl, beat egg and milk. Add the apple, butter, sugar, orange juice, peel and vanilla; mix well. Stir into dry just until moistened. In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375 degrees F. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

Applesauce Doughnuts

Yield: 4 dozen

1890 ml oil for frying
280 g all-purpose flour
5 g baking powder
2 g baking soda
1 g ground cinnamon
2 g nutmeg
0.5 g ground cloves
2 g salt
100 g white sugar
55 g firmly packed light brown sugar
2 eggs
30 ml vegetable oil
60 ml milk
235 ml unsweetened applesauce
3 ml vanilla extract

Heat oil in deep-fryer to 375 degrees F (190 degrees C).
Sift together flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt onto piece of waxed paper.
In a large bowl, use an electric mixer at medium speed to beat together sugar, brown sugar and eggs until fluffy. Beat in 2 tablespoon oil. Stir flour mixture into egg mixture, alternately with milk, beginning and ending with dry , until well blended. Stir in applesauce and vanilla.
Carefully drop batter by level tablespoons, 3 or 4 at a time, into hot oil. Do not overcrowd pan or oil may overflow. Fry, turning once with tongs, for 3 minutes or until golden. Transfer with tongs to paper toweling to drain. Cool completely.
