What kind of things are best to serve with ciabatta bread ?

You could toast/grill it and top it with tapenade-olive paste. Or chopped tomatoes, basil and a drizzle of olive oil. It's a great accompiament to pasta and rissotto because it's made with olive oil anyway.

More Ciabatta bread???
mozarella cheese, pastrami, sundried tomatoes and juicy grilled large flat mushroom sliced (after cooking).

If you're just serving ciabatta, a delicious thing to have with it is olive oil, salt , fresh ground black pepper and a little lemon juice. :) You can eat loads of it this way, without even to have anything accompanying it!
Agree with the above. But add a really good quality balsamic vinegar to the salt and olive oil. A small pool of decent olive oil with some balsamic vinegar drizzled in looks nice as well. Then just dip the ciabatta. Lovely.
I love a ciabatta roll cut in half, drizzled with a little olive oil, a piece of goats cheese put on top and then cooked in a medium oven for about 7 - 10 minutes until the goats cheese starts to go runny.
