Where Does Jam Juice Come From?

Whenever I open the jam jar there is always a small pool of pure jam juice which is like delicious. Where does this come from? How does it get there? Why cant the jam be pure juice and how can I get more of this delicious stuff?

This stuff is just sugar syrup. The cheaper the jam, the more of it appears.
Buy some fruit...berries are best. Pour loads of sugar on...leave for a bit, stir. Voila-'jam juice'! Not too healthy though.
You might prefer to buy , or make, a jar of fruit jelly rather than jam. This is available in a number of varieties. A spoonful can be easily softened in the microwave
