Preamble: All definitions are in the wordplay.
Can anyone parse this answer for me please? The clue is 5A "Horse and trap the Guardian essentially stabled." I'm pretty sure the answer is "COBWEB", but I can't parse - driving me crazy! Many thanks in advance for any answers.

Trap - web.
'trap' is the def for 'cobweb' and after it's been taken out it leaves 'Horse and the Guardian' as the wordplay - 'we' (for The Guardian) inside 'cobb' = 'horse'.
Cobweb (trap) - 'cob' (horse) + 'we' (the Guardian) + '(sta)b(led)' (essentially)
...sorry - the final 'b' comes from the centre of 'sta b led' ('essentially').

Thank you. Am I being thick here? Why does "we" = "the Guardian"?
It happens a lot in crosswords - similar to how clues mentioning 'the writer' or 'setter' lead to 'me' or 'I' (the writer is part of the Guardian staff in this instance so, 'we').
