Does anyone else have a bit of a fetish for these or is it just me ? I'm starting to worry !

Me too, but then I am a butcher's daughter. I have a huge selection of knives, all of them Victorinox and all kept razor sharp. There is a certain pleasure in knowing that they are in pristine condition.
My wife doen't like knives to be sharp, but I like mine to have edges like razors. So we each use different knives in the kitchen. She has hers, I have mine.
we are talking knives here as in kitchen utensils ?
Sharp enough so you only have to 'threaten' the food ...that's how sharp mine are !!!

It's not odd, I collect kitchen knives (and penknives) too, Global, Henckel, Richardson, Taylor, Sabatier, etc.

It's just nice to be able to slice onions the way Worrall-Thompson does.
We ended up with 4 blocks of knives trying to find the right ones! Now have some lovely Sabatier and the others ended up in various boot-sales.
Henckels for me, too. Though I have a couple of Wusthof's which I like aswell.

You can sometimes catch me peeling spuds with my 9" chef's knife.....
Has anyone seen any Henckel 5-star knives ? House of Fraser have the 4-star, but I have an ambition to own just one of the 5's.

Sabatier aren't all that they're cracked-up to be ...

Yep, always sharp and victorinox are a great make!
how do you knifies keep them so sharp? I invested in an electric sharpener, but it's rubbish.
crisgirl, invest in a proper steel for the best results. A few deft strokes and it's as sharp as anything.
Rotary sharpeners aren't that good for your knives, and tend to men they need re-grinding sooner.

whiffey, Henckel's 5-Star , though haven't seen them in the flesh anywhere. (Well, you have to hold a knife to see how it 'feels' before you buy it, don't you? !! )
