whle chicken plus fillets
Yep the whole chicken! The method can get complex, but it need not be.

I always stuff with an onion, and or a lemon, then scatter quartered onions in the tray then lay on top, baste with plenty butter and olive oil, salt and pepper. It always ends up really moist, and really really tasty!
Oh and I add a whole garlic bulb, scattered around, and inside too...

I like anything done in the slow cooker, or marinated and pan fried. As for recipes...I usually just wing it.
Speaking of wings...I marinate them in cumin, hot smoked paprika, ground coriander, garlic, tomatoe puree, oregano, olive oil. Then bung in the oven for 20-30 minutes, depending on size...turn once.
Nice pun there pasta :) Enjoyed that
Spatchcock.
Carefully peel the skin away from the flesh from the cavity end a few inch's back and insert butter under the skin,

Quarter 1 orange and 1 lemon and insert the quarters until the cavity is full, pill the flesh/skin over the cavity.

Rub a small amount of butter over the skin of the chicken and season with freshly ground black pepper and sea salt and squeeze any remaining quarters of lemon and orange over the chicken.

turn the oven up to full blast and when up to temp put the chicken in and turn the oven down to 170c for approx 1 3/4 hrs, basting half way thru.

Avery moist and sweet chicken
