i) Is there a list anywhere of what each of the function buttons do (like hold down f8 at start up for safe mode)?

ii) Is there a way of assigning functions to an f key (I assume there is)? I have a new keyboard and it has no 'sound mute' button, so this is what I am particularly interested in assigning a key for.

But different programmes will use the function keys differently - it 's not standard.

I bet your keyboard has got a mute button somewhere. Have you read the bumph that came with it?

Unfortunately Ethel, its a cheap and nasty replacement from PC World ( I know!!!, I should never go there, but..). Anyway, no bumph came with it and it definately hasn't got a mute button.
I have no gripe over PC World. It has its place.

Anyway, try F8 as mute. Try it on its own, with Ctrl and so on.

It may work.
