How fresh are your eggs?
You are talking about hard boiled eggs, I take it, beez?
I boil mine from cold.....then once boiling 2 mins for dipping, longer if not wanted soft ! Take them out do soldiers and by time I cut the top...perfik !
do this, put eggs in cold water with plenty of salt, stop the eggs from breaking, count minutes i usually do 4/5 once the eggs come to simmer.
i generally find they are done, but the problem is that the shells are often very thin, if so get a knife and cut the top off instead of trying to peel them. it's easier.
Try a bit longer? I do just over 5 mins, which surprised me at first, because I thought soft-boiled were supposed to be 3. It probably depends on the size of the egg, too.
If they are hard boiled and you want to peel all the shell off, you need to roll them on a piece of kitchen towel. Roll with your palm whilst pressing gently. The shell willcome off easily when it's all shattered.
I do exactly what Tilly does x
This happens when the eggs are fresh - may help to use eggs that are slightly older.
I find it very hit and miss, I time 6 minutes from boiling (start with cold water), then I do as smow and tilly but sometimes the egg does come off with the shell, I cooked 4 yesterday and 3 eggs shelled easily the last one not so much.
For hard boiled eggs I put them in cold water and bring to a simmer the cook for 8 minutes more
Yes lovely fresh eggs don't peel.
well try adding salt to your
water you may find it helps

First, you should allow the eggs to cool in cold water.

The two methods that work best for me is cracking the egg shell and rolling the egg on the hard surface, and shaking the egg in the glass of water.

I cover 6 egg peeling methods in my latest blog post https://www.basenjimom.com/make-hard-boiled-eggs/
