What is the origin and meaning of the saying "happy as a clam'?

Never heard anyone say this. Perhaps, if it does exist, it might come from the slightly smiley shape of the 'mouth' where the two shells that cover the soft bit of the clam join???
This is a very popular saying in American English. The original saying was "happy as a clam in the mud at high water" and it has merely been shortened over the years.
