I would suggest it is simply the juxtaposition of two totally unrelated words to make a catchy, memorable title, and to get people guessing - and if so, it appears to have worked.
Just a guess, but a spear might be considered a phallic symbol whilst rhino-horn...oh, dear!..is considered to be an aphrodisiac. Not inappropriate, you may think, given the function of these places.

The clubs do have a dedicated website with FAQs. The one re the name just says something like: "Ah, that's a long, long story", so obviously they aren't going to tell you.

......and this is the only expanation you will have from the two leading men on this site as neither will have darkened the doors of these places :D!!!
Hmm, interesting, it says you can't access the FAQ page unless you become a regular paid member of Spearmint Rhino, hmm...

;-)
Click http://www.spearmintrhino.com/faq2.htm and see Question 1, Indie. I got there by doing a Google search using "spearmint rhino"+name. (Perhaps 'member' is an unfortunate word-choice in the circumstances!)
In trying to think up a name for his club, the proprietor closed his eyes and let his thoughts wander. He saw a vision of a rhino pushing its horn into the hole of a polo mint (think about it), then opened his eyes and said 'That's what I'll call it! Polo Horn!' :-D
