why do showers go hot and cold when they are set at the right temperature?

Fluctuating water pressure, such as a tap in the house being turned on or a toilet being flushed.

Less water - it gets hotter.

Most normal shower units have a simple pressure regulator built in to the flow control valve block so they should be fairly regular even if taps are opened (within reason obviously), if yours is varying a lot then probably the rubber/plastic diaphragm in it has a leak inside and is stopping it to work.
You might need to check this out with a agent for that model.
