Why REEFING?
If the wind is up, you shorten your sail (canvas) - it is called reefing.

having less canvas = REEFING, OK I get that part.
When the wind is up you reef which gives you less sail(canvas)

Winds up refers to the wind being stronger hence the need for less sail.
