A very large number of tourists to Tunisia are French and German.  Consequently, euros would be ideal but you will be able to change pounds sterling easily in banks (as well as the euros).

When you buy stuff - particularly in the souks - don't forget to haggle!

When we were there, we just changed our sterling in to dinar on arrival at the hotel, and had no problem for our whole trip.

However, the Tunisian Dinar is a 'closed currency', so you are unable to purchase it prior to entering the country, and must exchange it in full prior to leaving.

Also, have a couple of pound coins handy to give to the people who will carry your bags from the airport to the taxi / bus.
