I received my Japanese student visa a few days ago. The expiry date on the visa is 23 August 08. Does that mean I have to depart Japan on this date? or do I have to depart one year from the date I arrive in Japan as I won't be in Japan till the 24th September?

The expiry date of the visa marks the end of the permitted period of your stay in Japan. It may well be possible to extend the visa whilst you are in Japan if that is your wish.
Can't answer specifically in your case, but I used to work in Japan and extended my initial one year visa when I was there. It was pretty straight forward (damned sight easier than getting a US visa!). I'm sure your college will guide you, as this must be a common issue for students.

Have a great time!
