Does it actually happen?

The thing where, if you keep looking at the same tickets or hotel, the sites recognise you, and know you're really interested, and bump the price up?

When I fly, because I'm a saddo billie no mates, and usually on my own, I go to the airline desk as late as poss, when they're trying to fill the plane that takes off in an hour, and get cheap tickets. I know, tight ar5e !

But if you do try to book stuff online in advance, the price keeps changing.

Is it the cookies thing?

It's far more likely to be due to data derived from lots of enquiries from different people than from an individual. For example, while airlines will probably raise their ticket prices automatically when they know that lots of people will want to travel to a major European football match on a particular date, they might not spot the fact that lots of netball fans will all be looking to travel to a major tournament on, or around, the date of that event. However their computer system will detect an abnormal number of enquiries for flights around then and start putting the fares up.
