On a flight from Ireland into Gatwick what is the usual time between the plane landing and you getting to your car (short stay CP)?

that would very much depend which stand your plane parked at, and whether you needed to wait for any checked bags.
very hard to say. Some of the gates are a good 15-minute walk from immigration, and some of the queues at immigration last even longer than that, depending when you land.

Also, I suppose, which terminal you land at.

Flights from Ireland shouldn't be affected by queues at immigration control because of the 'open border' policy between the UK and Ireland. (I assume that Gatwick is the same as Stansted, where people arriving from Ireland simply follow the 'blue channel' signs and walk straight through.

I'd allow 20 minutes from getting off the plane to getting to the car park.
