Can anybody recommend a resort / hotel in Ibiza, some where not full of British type bars, but a bit traditional. Have been to Santa Eulalia but fancy somewhere different.

Unless you want to spend a lot of money in an agroturist hotel, most places do have the brits and bars. I'm in Sta Eulalia and that is the best of the resorts.
