I wanna build my next pc from scratch, but I don't know much about the hardware side of things - is there any sites that can explain what it all means? prefferably from beginner level upwards. Cheers

First you have to decide what you want the PC for, then choose the hardware accordingly. If you choose components that will be suitable for a games machine, then it will take anything else you may throw at it. Also you will need to decide whether to choose AMD or Intel for your processor, and Nvidia or ATI based cards for your graphics, and of course how much you are willing to spend.
There's a great book called 'Building A PC for Dummies'. It's not expensive and is very user friendly. You can get it at Amazon
