Just tried adding a new dvd writer to my dell dimension e520 - but none of the fittings are standard! any ideas?

By fittings, do you mean the drive housing or the connections?

I've looked at the spec for the e520 and you need a sata to IDE convertor. They are available on ebay for a small price. Here's an example:
