Epson DX3800 scanner/printer/copier

I have an Epson DX3800 multi device and I want to scan an entry form for an event and then make corrections/updates to it. I only have a hard copy of the one I want to amend. When I get the image and save it as a .jpg file and then call it up on the screen it won't let me make changes to the text. Has anyone any ideas where I am going wrong or what I should do please?

You need some software that will scan the document and allow the scan to be saved as - for example - a word document. I think there's a feeware programme called SimpleOCR that you might try.
