Anyone know how to disable this option from the bottom of the list that is displayed when right-clicking on an open program in the taskbar?

You should have a sickly green icon in your system tray (near the clock). If you point at it, it says NVIDIA Settings.

Click it, and select "nView Desktop Manager" from the menu

On the Desktop Management page which is displayed, click the "Disable" button.

Click OK.
