How does a hotspot know the laptop settings in order to get connected to the internet ??

It actually works the other way round - a laptop will have to be able to access the hotspot settings that are sent out via a wireless router. It's then a case of connecting to the relevant available network, will will adjust your laptop's wireless settings accordingly.

So is this process automatic or do you have to mannualy configure the settings your self ??
Automatic, in my experience - although sometimes it's a paid service (e.g Gatwick Airport.)

You seemed to be pretty clue up on this, so how did you learn it all.
Mostly through experience. I've got a wireless home network, which is practically the same thing as a hotspot.
Google is also a fantastic help.
