APP protection and procedure - How does it all work

I have an International gastronomic dictionary in 5 languages which hopefully will be published soon, but I wanted to firstly launch it as an APP. I have a developer in China keen and ready to develop ($800), He will develop it in all the applications Android, IOS iphone, ipad etc. I'm so uninformed about what happens next and how I can protect my data from being made into an APP by someone else/developer and taken from me. Once it has been developed what do I have to do next? I know it has to get onto Apple/whatever store, but need any advice on the procedure. Is it as complicated as it sounds? Just worried data could be stolen, it has taken me over 4 years to write the dictionary (English, French, Italian, Spanish and German) Any help anyone can give me on procedure and protection I'd be incredibly grateful. Thank you all in advance.

I can't help you with the technical side, but have you a publisher, is your copyright as originator/owner of the work recorded somewhere?

No I don't have copyright yet, do you think that I should get that in place first? If so how do I do that?

I don't know what you mean by APP. However, if it is some form of advanced publication, I would suggest that first you establish some definite form of copyright.

Search the Internet, you may find better advice than the following:-

Dear Ron, Thanks for the really useful link, An APP is an application of iphone, ipad etc, like Angry birds app (game) which has sold millions. It was really kind of you to answer. Will keep you up-dated what happens. Hope to be printing the dictionary towards end of year, so having the copyright in place is important. Thanks to you and Boxtops very muh. Doogie
Good luck doogie - yes, certainly copyright it - I don't know whether you can actually patent something like this as well. Do it soon, otherwise someone else might nick all your hard work and claim it for their own.
