Just drag it down onto the taskbar and let go

I've dragged the icon, a box comes up, one of the headings 'Under Pinned', the name of my icon appears under this heading, but it doesn't stay on the taskbar.
OK, just checked it again, if I just drag and drop an icon from the desktop onto the taskbar a menu comes up, but just ignore that menu and click back anywhere on the desktop and it's working for me.

If you can't get that to work then click on the start button, find the icon you want on the start menu (if it's on the desktop chances are it's on the start menu somewhere too). once you've found the icon right click on it and select "pin to taskbar"

Does this only work with a 'programme' icon, as this is a regular document that I use, and want easy/quick access to it? It doesn't seem to work with this icon and I can't find it on the start menu.
Thanks your help.
No, I was testing it with a text document.
OK bit more investigation.

With a text document I can pin the document to the task bar, but if I just click on it it opens a blank notepad document no matter what the icon on the desktop contained. If I right click on it then I get a menu and one of the options is to open the document I created.

Now it would seem there might be some particularities with pinning stuff to the taskbar, possibly depending on what the document is.

What is the document you are trying to pin actually created in?

Ah, I've got it now, because this particular icon/document is an Outlook document, it doesn't actually show as a separate icon, but as a 'pinned' document. So if I r/click on Outlook, my pinned document is there. I am happy now.
Thanks very much for all your help. (brilliant, as usual)
