I have to produce a series of pie chart and bar graphs from tables I have stored in excel. The default colours used by excel in creating charts are extremely dull (dark red, purple, dark blue etc) and I was wondering if anyone could explain how to change the default colour scheme so they are a little more bright and attractive?

I'm using the 2003 version of excel if this makes a difference.

Yes you can - it's a question of right-clicking on different elements in the chart and choosing from the options offered. A bit of a fort-around but if you also use exel's help you can get there.
