Impossible Pie

Does anyone have a recipe for this custard type dessert that they have had good results with?
I remember trying it a few years ago & wasn't that impressed with the result.
I've googled it, but there are many using different quantites of ingredients and wanted one that you were pleased with.

nabob - are you talking confectioners custard as in a vanilla slice?

No, its a custard tart like result. Pastry -ish on the bottom, egg custard in the middle and coconut on the top.
This is the one I use:-

4oz Butter
8oz Caster Sugar
8oz Desiccated Cocunut
4 Eggs
4oz Plain Flour
Half Teaspoon Ground Nutmeg
Half Teaspoon Vanilla Essence
Half Pint of Milk

1. Preheat Oven to 350F (180C) Gas Mark 4
2. Lighly grease 10inch pie plate or flan dish
3. Cream butter and sugar, add coconut and eggs.
4. Sieve flour with nutmeg, add vanilla essence.
5. Fold into coconut mixture, gradually whisk in milk.
6. Pour into prepared dish and bake for one hour.
That sounds like a Manchester tart except M T has a jam base!

I know exactly what you mean, I haven't got it to hand but I use the Sophie Grigson one, you might be able to search for it.
I made this pie years ago but the pastry on the bottom was not quite cooked, the middle was fantastic. I am going to give it another go 2day hope it works out this time
I made this pie years ago but the pastry underneath was a bit soggy, probb my fault too impatient!!!! I am going to give it a try later 2day and will try 2 say away from the kitchen until its done LOL.
