you can but fast track tickets for the queues, but any time there are school holidays you can expect to queue.
Tip from an American pal who lives in Orlando, watch the 3'oclock parade on day one, then when the parade is on for the rest of your visit head for the ride with the longest queue whilst everyone else watches the parade, it worked for us.
A number of web sites give advice on when to visit Florida.
This is one:

They say:

Without exception, Easter is the most popular time to travel to Florida. Many vacation homes will actually book out Easter and the surrounding weeks up to three years in advance, so it is important that if you are restricted by school vacation schedules that you dont drag your heels. You can expect the theme parks to be busy.
Why not go in February?

While it is cold here their winter is like our summer.

We went in February about 5 years ago and we were walking around in shorts and t shirts and had temperatures into the high 70s, even low 80s.

It is considered "off season" so the parks were quiet (and all the rides were open).

They do have Presidents days during February (like a bank holiday) and it was busy that weekend, but quiet the rest of the time.

We had 2 children at school but asked the school for an extra week and went away for 2 weeks during their February school holiday.
Dont be tempted to go in the summer.

One site says (about Orlando summer)

Unless high humidity, afternoon thunderstorms, and masses of hot and sweaty tourists sound like your ideal vacation, then avoid Orlando in the summer months (June to August).

Orlando is ridiculously busy at Easter. However, if you're prepared for this and plan accordingly, it's still enjoyable. We've been three times at Easter. If anyone's thinking of going this year and has children, the April school holidays are the perfect time. Usually, the April holidays are Easter but, of course, this year Easter's March.........so American's are at school. You need to be particularly early during Easter if you want to visit the water parks. The queueing starts an hour before opening and then there's a stampede for the best locations and sunbeds etc.

Thankyou for all your advice. I think we will try and avoid Easter if we can.
