Usually they just stick them in a warehouse and bring them out during the next sale!

There are sites online that get rid of excess stock, like Secret Sales or vente-privee.com (my favourite). I found a fantastic dress for 60% off RRP! Feel free to use my email address as your referrer: [email protected].
