if you add gears to help spin a larger object , could one person produce more energy to store and use electricity?

You cannot break the law of conservation of energy.

Energy = force times distance

The man produces a low force and moves his/her legs over a large distance. The gearing translates that into a larger force over a smaller distance.

Losses through friction will always mean less than 100% efficiency.
It's what you do with wind-up flashlights and radios.
