apparantly you have to leave the lid snapped tightly shut on a biscuit tin to keep biscuits fresh and crisp from the air getting to them..my question is.... why doesnt the air already trapped in tin make them soft?

whatever the air does to the biscuits - hydration presumably, since they go soggy - a certain volume of air only has a limited capacity to do this (it only carries so much moisture). so the air in the biscuit tin will do its work then it's done. if the tin is airtight, it won't be replaced by new, moisture-carrying air which could then also do its evil work and so on.

And that's exactly what I would have said if I had been here a few hours ago.

I remember being told the difference between biscuits and cakes (useful when the difference blurs, like welsh cakes / scones / shortbread etc.);

Biscuits go soft and cakes go hard.

So, men, are you biscuits or cakes?
