I am meant to be cooking a 3 course dinner tonight for the in-laws. Has anyone got any suggestions for an easy night?

I would start with a simple cold starter, then you can have it made before hand, smoked salmon or melon with parma ham.

Then how about a pot roasted beef( portugese style), place a joint a beef (brisket or silverside whatever) in a large casserole dish, add 1/2 bottle of wine, tin of tomatoes, an onion, couple of cloves of garlic, 1 tsp paprikaa red pepper. Place in the oven on a low heat or slow cooker if you have one, cook for about 6 hours. when you want to serve it, take it from the juice, carve, puree the juice (instant gravy, no need to thicken)
Serve with roast potatoes with a green veg

Again I would serve a cold dessert, less messing, you can get very good quality desserts in the supermarkets if you don't want to make yourself, probably choclate and then a good chocolate.

what about if you are an in-law like me and have an allergy to garlic ? one time I had a meal with heavy garlic and didnt like to be rude to the hostess and refuse to eat, I ended up at A&E a few hours later.I like garlic it doesnt like me ! Nowadays everyone presumes that the whole world likes garlic bread etc , have a thought for those who dont pls.
A ROAST!! mmmmmmm thats what sundays are for......maybe with good old fashioned prawn cocktails and chocolate cake......
