here's a real easy one take a can of black cherries (serves two or one if its me) thicken SLIGHtly with cornflour...about the consistency of double cream but only just then add brandy or cherry brandy (or cherry b if you're broke) to taste and to thin it back to thin single cream consistency. Keep warm but do not boil again Serve with vanilla ice cream or sponge fingers or both. NB not for the kids as the alcohol will not have boiled off.
I use frozen morello cherries from Aldi. Defrost in microwave and add some arrowroot to thicken. I read Woofgangs recipe but cornflour will cloud the sauce whilst arrowroot keeps it clear. Use whatever is appropriate. This doesn't need any alcohol (unless you insist) and is wonderful over meringue and vanilla ice cream.
