Is it possible for the various publications to see who has visited these sites for help? Probably a very daft question but I'm computer illiterate so really don't know if this is possible.

If your computer has cookies enabled (and if you are computer illiterate you probably have) then they can keep track of what computers visit them. But they don't know who owns that computer or even where it is.
