Spinach, turnips, and red and white radishes are ready to pick in little more than a month and will tolerate a light frost...kale can be added to that list as well... Lettuce grows rapidly but doesn't do well in the heat of late summer. If you get carrots and beets planted right away they will mature but will be small when harvested. They're still quite tasty though... Good luck!
Swiss chard (like spinach but hardier), and if you can find a sheltered spot, try some of the mixed Japanese type salad leaves like Mizura, mustard, etc.

Little gem lettuce. (One they get big enough to plant out individually, cut the bottom off plastic mineral water bottles and use them as a cloche to protect plants from the frost by poking a stick through the bottle top to anchor them .
