Upmarket and downmarket are words which indicate 'class' and wealth. The posh and rich are the 'ups' and the rest of us are the 'middles' and the 'downs'. So downmarket language is the kind of speech one would expect the 'downs' to use...ie more crude, more rough and ready and so on.
