Calling all Bajan`s - Barbados curry

I have a packet of curry powder from the supermarket in Bridgetown called Ecaf and I want to use it to make a traditional Barbados chicken curry with rice and peas. How do I get the consistancy of the curry sauce? The packet says to use tomatoes but I don`t remember Barbados curry being partiularly `tomatoey`. Anyone out there from Barbados or with Bajan heritage that can help me? Thanks
