Hi I've just bought a duck , with giblets , just wondering if anyone has any recipes ideas to share with me..........what can I do with the giblets ?

Duck Pilaf

1 Roasted duckling
1 cup Uncooked regular rice
3 tablespoon Vegetable oil
1 cup Chopped celery
4 cup Broth (Duck Giblet Broth)
1 teaspoon Salt
� teaspoon Pepper
� cup Cut-up dried apricots

Saute rice first to give it a toasty flavor, then blend with duckling and apricots to make this gourmetlike casserole. Preparation Time: Cooking Time: 1 1/2 Oven Temp: 350oF Instructions: 1. Remove skin from duckling; strip meat from frame, then dice. (There should be 3 cups). Set aside for step 4. 2. Saute rice in vegetable oil in a large frying pan, stirring often, just until golden; add celery and saute 5 minutes longer. 3. Stir in broth, salt, and pepper; heat to boiling. 4. Spoon into 8 cup baking dish, stir in duckling and apricots; cover. 5. Bake in moderate oven until rice is tender and liquid is absorbed. Source/Author: Family Circle
Cajun Dirty Rice

1 pounds Chicken gizzards - finely chopped
1 pounds Chicken livers - finely chopped
� cup Margarine
1 � cup Onion; finely chopped
� cup Celery; finely chopped
� cup Green pepper; chopped
2 Garlic cloves; minced
2 teaspoon Salt
1 teaspoon Pepper
⅛ teaspoon Ground red pepper
3 cup Hot Cooked Rice
� cup Chopped Parsley

Brown meat in margarine in large skillet. Add onion, celery, green pepper, garlic and seasonings, mix well. Cover. Cook, stirring occasionally, over medium heat until vegetables are tender. Add rice and parsley, mix lightly. Serve immediately.
If you've got a pressure cooker shove the giblets init with a bay leaf, a few peppercorns, a bit of celeryand carrot. Pressure cook for 20 minutes and you will have beautiful stock to use in gravy/soups etc. If you haven't a pressure cooker just do it on top of the stove but it will need much longer - at least an hour.
For the main duck it's lovely with a red wine gravy (using stock made from the giblets) and some saffron roasties (after boiling coat with saffron (or turmeric) mixed with olive oil and rosemary) and some winter veggies such as courgette, onions and mushrooms.
