Music is such a subjective thing, and so diverse, that I think you can only theorize with this question; there's probably no one correct answer.

My theory, though, is that it's because music has a certain order to it; crap music is stuff that isn't disciplined, it's out of time, notes jump all over the place, and sounds don't fit any points on any scales. Even abrasive stuff like metal and punk has to obey these rules. Humans naturally love order, and organisation, so music represents the easiest way to create order in a universe otherwise full of chaos, and to stamp your own identity on a part of it.

Sorry if that's pretentious, or contentious, but it's the best I could do.
As a musician, I enjoy music because it is in tune with and harmonizes and empathises with that part of my brain which processes the sounds we hear into pleasurable sensations that the brain and mind translate into messages the rest of my being can understand and therefore enjoy.

the fact that some people like certain types of music and others I think boils down to the God given uniqueness of each individual which is part of the divine mystery of our creation, which I know some people dont believe in but I do.
Because if I didn't I'd be out of a job
I once read that the rythmic beat of music tells our brain that our heart is beating healthily.

Could be a pile of crap though.
