Read the book!
I assume you are referring to the directors cuts of Christopher Lee. In the Return of the King he only really appears at the end when he's messing up the Hobbits homeland. Not a large part of the book but integral to it. We will have to wait and see.
The rumour is just now that Christopher Lees scenes for "The return of the king" have been axed & when asked recently if he would be attending the Premier in December his reply was " What's the point".Which if this rumour is true then i won' be going to see the 3rd movie as i only went to see The first 2 because of Christopher Lee.
his scenes have definitely been cut. see http://news.bbc.co.uk/1/hi/magazine/3267993.stm
I read the link but it doesn't say all the scenes were cut but I would be surprised if saruman was cut out completely.
