I was behind a car the other day that had 'EU' underneath
the circle of stars on the number plate. What country is that from ?

I couldn't see one either.

I suspect it means Reg'd in European Union as opposed to showing a Country, eg: GB
Surely it's just an EU for Europe, did't it have a normal registration as well?
The only thing I can think of is it just means European Union.
I guess they had reasons to hide where they and their car was from. Maybe we can get one with 'Earth' written on it.
I have this on my number plate (at the edge) it just means registered in Europe (UK in my case) Have had the car from new & it came from the dealership with this on the usual plate.

There's an 'EUR' number plate country code, but it's for use on EU official vehicles. There are also loads of unofficial country-type codes on car registration plates, such as 'ENG' for England. I expect that's what you've seen. See here for examples...
