I am pursuing information from my employer, a large public body, as part of a grievance. Does anyone know of a suitable guide to my rights, a pro forma for applying, or helpful trade union advice, please?

is it the kind of thing that would be covered by the freedom of information act? as your employer is a public body it might well be (depending on what it is). If so, just speak with the person who deals with the freedom of information requests and they will tell you how to apply

Thanks, bedknobs. Simple advice, but very helpful. I phoned the DPO and she told me exactly what I have to do.
Have you tried the ACAS website? They are pretty good on employee/er things!

And thanks to you, too, Vixen-am-I. I don't trust ACAS in the flesh, but their core information is good.
