p/timers holiday entitlement

As a small company we have just had to let an employee go due to rudeness + gross misconduct to clients and management,they now want to sue us due to unfair dismissal on grounds of no warnings and no holidays. we had over last couple months called her in twice to discuss issues and give another opportunity and finally third time asked to come in and they hung up the phone - firstly - can we be deemed as to have unfairly letting her go? and secondly - are we expected to pay for holidays when she only worked approx 8hr per week and with us only since last aug '04?
